New requirements have come into force over the past 10 years related to food fraud risk mitigation, specifically, requirements for hazard analyses and food fraud vulnerability assessments. This chapter will review new US and EU regulatory requirements, Global Food Safety Initiative requirements, and discuss both standards of identity and EU geographical indication programs. General approaches to hazard analyses and food fraud vulnerability assessments are reviewed, along with a brief discussion of the role of analytical detection strategies in a food fraud prevention program. Finally, this chapter will summarize data and tools available to support the implementation of a food fraud risk mitigation program, including public, official, and private (subscription-based) tools and databases. In today’s food safety environment, it is both necessary and possible to implement targeted and effective food fraud controls.
