Cocoyam is one of the most important food crops on the African continent and provides comparatively more calories per day and diverse vitamins, minerals and bioactive compounds as compared to cereal crops. This study recommends the optimal hot-air drying settings to facilitate preservation and value-addition of Cocoyam without adversely altering the valuable starch and micronutrient content; the study, therefore, contributes to the mitigation of both extreme physical hunger and chronic undernourishment due to hidden hunger.
