The global market for plant-based foods intended as alternatives to cheese products is increasing and will reach almost $4 billion by 2024. In this study, an evaluation of the composition, structure and physicochemical properties of four commercial plant-based block-style products was conducted, with results compared with those for Cheddar and processed cheeses. The plant-based products had considerably lower protein contents (0.11–3.00%) compared to the Cheddar and processed cheeses (25.04 and 18.50%, respectively).

Substitution of beef with alternative proteins is one practical trend taken by industry and consumers to reduce the negative impact of convenience products on the environment. Numerous products based on plant, insect and fungi proteins compete to replace beef burgers in an environmentally friendly and healthy way. At the same time, there is a lack of studies which assess different options from environmental impact perspective but also with consideration of production scales, recipes, nutritional values, and sensory properties.

By the year 2019, the number of people without access to electricity was 770 million, most of which lived in rural areas. The currently models for rural electrification are often limited in their electrical analysis, or focus on a idealistic optimal solution whilst ignoring the real hierarchical topology of power systems. This work proposes a rural electrification strategy that makes use of Geographic Information System (GIS), graph theory and terrain analysis to create the best electric network topology.

The mounting research on consumer behavior and climate change is gradually improving our understanding of effective ways to mobilize consumers to mitigate climate change. The relationship between consumer behavior and climate change is complex and most consumers are not capable of determining which behavior changes are worth doing. Research has come a long way identifying the most impactful behavior changes, but more research is needed to refine and situate these insights.

Low-income households (LIHs) have experienced increased poverty and inaccess to healthcare services during the COVID-19 pandemic, limiting their ability to adhere to health-protective behaviors. We use an epidemiological model to show how a households' inability to adopt social distancing, owing to constraints in utility and healthcare expenditure, can drastically impact the course of disease outbreaks in five urban U.S. counties.

Bangladesh is one of the world's strongest emerging economies. This nation is working on improving women's empowerment, with more women entering meaningful employment, and socio-cultural constraints on women's mobility gradually decreasing over time. However, for women in Bangladesh, travel constraints are currently more significant than cultural constraints. Therefore, to sustain the nation's economic growth, challenges to women's mobility must be resolved by developing a gender-inclusive transport system. To achieve this, proper transport planning is necessary.

Dance for Parkinson's can be characterised as a growing social movement which has become a worldwide phenomenon that gives rise to new questions about the meaning and importance of dance in relation to intersecting and overlapping identity categories of ageing and chronic conditions. In this article, we probe into the potentially constructive interplay between the lived experiences of Parkinson's dance as a space of revitalised sensuality and the cultural imaginations and values connected to the nexus between ageing and chronic conditions.

This study aims to map the learning trajectory (LT) of a student with learning disabilities (LDs) regarding the unit concept in length measurement and the usage of rulers. The article draws on data from a teaching experiment with a 10-year-old student with LDs in Turkey. Data were analyzed in two stages, including microanalysis, where each successive teaching session was separately analyzed, and macroanalysis, where the teaching sessions regarding interrelated instructional goals were analyzed to construct the LT.

In low-income and middle-income countries, such as those in sub-Saharan Africa and Latin America, the COVID-19 pandemic has had substantial implications for women's wellbeing. Policy responses to the COVID-19 pandemic have highlighted the gendered aspect of pandemics; however, addressing the gendered implications of the COVID-19 pandemic comprehensively and effectively requires a planetary health perspective that embraces systems thinking to inequalities.
